How to make Enjera

First make the starter:

Combine 3/4 cup lukewarm water, 1/2 cup of teff and a pinch of active yeast in a bowl, stir it, cover it with a towel or a loose lid and let sit at room temperature for two days. Then stir again. Add 1/3 cup of teff and 1/2 cup of water, cover loosely and let sit for another two days. Stir, add 1/3 cup teff and 1/2 cup water and let sit for 4 more hours.

Add a bit of water to starter and mix till smooth. Then add teff to consistency of thin pancake batter. Cover and let sit for another 5 hours. Then stir, add a bit of salt. Use large pancake skillet with lid. Preheat pan on Medium heat. Pour a bit of batter in the pan and swish around to spread out, just like making crepes. Cook uncovered until holes form, cover with the lid and cook about 3 minutes or until it comes off the pan easily but not burn.

How to roast coffee at home

Roasting your own coffee at home is the best way to enjoy coffee. There is nothing better than the aroma of freshly roasted coffee beans. Make sure to turn on the fan above the stove and to open the window, since roasting coffee beans does produce some smoke. Cool them immediately after roasting by stirring in a large metal colander for about 5 minutes preferably next to a fan blowing at the beans to cool them off.

How to roast coffee in a pan or a pot on stove top

  • Cast iron skillet works the best. Using low heat setting preheat pot for about 9 minutes.
  • Put coffee beans in the skillet and keep stirring all the time.
  • After about 12-14 minutes of stirring and roasting you'll hear the first bean crack. If you stop roasting now you'd have a very light flavored coffee.
  • Roasting it to about 18 minutes produces Full Roast Flavor.
  • Second cracking sound will be heard, let it crack twice, and it should be Dark Roast. The beans will look glossy from the oils.
    Do not cook them any longer than this!
